The book consists of six sections underpinning the latest analytical technology of food toxins and toxicants, and describes the detailed applicable aspects on major areas of toxin work. Part I reviews the recent trends and projects the future roadmaps for toxin analysis. Part II covers the novel analysis of microbial toxins using biosensors, mass spectrometry, immunobiochemical and plasma resonance. Most are high end analytical tools and this information may inspire readers on how to apply the latest research-based technology in toxin analysis. Part III describes the analytical approach of commonly encountered plant toxins such as mushroom and potato toxins. A case study on the identification of unknown toxins in WHO poison case is also included. Part IV focuses on marine toxins. Different analytical approaches for lethal shellfish toxins, puffer fish toxins and ciguatoxins will be presented.
